Divinity

Today we finished up some of our cleaning tasks in time to do some actual food prep. Sausage Gravy has been made and put in the freezer. Then we were on to making some of Grandma Hersom's divinity (minus the nuts ~ we are nutty enough)

The first batch (green) was trashed. It never ever did set up correctly.

The second batch (Red-Red ~ actually turned pink..but that was our desired color).... so that was all good!

The third batch was green. It still took it's own sweet time to set up right. But after a bunch more stirring by Doug..we achieved success.

Grandma Hersom's Divinity

3 cup sugar
1/2 cup white syrup
3/4 cup water
3 egg whites
1/2 tsp. salt
1 tsp vanilla
Optional: food coloring / nuts

1) Put sugar, syrup and water into a large saucepan.
2) Cover and cook over low heat, stir until sugar is dissolved.
3) Increase heat - bring to boiling point.
4) Boil 3 minutes (without stirring).
5) Uncover. Cook until syrup reaches firm ball stage.
It will make a soft ball in cold water.
6) Add salt & vanilla to egg whites. Beat egg mixture until stiff.
7) Continue beating the egg whites and add half the syrup.
8) Cook the other half of the sugar mixture til (crack ball stage).
The mixture will make a hard ball and crack in cold water.
9) Beat the remaining sugar mixture into the egg mixture.
10) Once the mixture has been combined complete, continue stirring the mixture with a spoon until the candy holds it's shape when dropped from a spoon onto wax paper.

Quit working so hard for our arrival---we don't care if your house is clean, etc. We just want to be together!!!!
